Today’s two-minute review features a recipe from Tabitha Brown’s cookbook. It is vegan, but my goal is vegetarian…eventually.
Breakfast
Loaded Scrambled Eggs

Berry-Spinach Smoothie
1/2 cup almond milk
1/2 banana
spinach
frozen berry mix
Lunch
Hawaiian Roll Cheese Sandwiches
2 Hawaiian rolls
cheese
toast in the air fryer for 2 minutes at 350 degrees
mayo
mustard
red onion
tomato
Pineapple spears on the side
Dinner
Flatbread Pizza from Tabitha Brown’s: Cooking from the Spirit Vegan Cookbook
flatbread
pizza sauce
cheese
toppings: red onion, mushrooms, red peppers, spinach
salt
garlic powder
bake in the oven at 425 for 12 minutes
optional spice: crushed black peppercorns on top
Snacks
Green apples with peanut butter
Popcorn
Instant Oatmeal (Maple and Brown Sugar)

It was easy to follow the recipe, the cookbook is less than $40 and when you read it, it feels like Ms. Tabitha is in the room with you (if you watch her videos, you would know).
